I’ve tasted my one-month old kombucha tea and it was devastatingly delicious. It’s pretty much vinegar at this point, but amazing vinegar nonetheless. It makes me want to try to brew hard kombucha... Using champagne yeast with fermented tea sounds a bit weird, but I’m sure the result would be stunning.
