My sauerkraut did, in fact, not work. Went fury on the top. I learned lesson for next time.
Not enough brine and too big of an air gap were not ideal.
@neauoire I will. I only have huge jars at the moment so next time I’m in a shop where I can grab them I’m going to pick up some smaller canning jars.
@jameschip Good luck with your next try. Using a heavy lid that really presses down on the kraut and pushes the air and fermentation gases out might be advantageous. Also sealing the gaps between lid and jar with some water/fluid helps to keep air out.
